Beer
Carrageenan is used as a wort fining agent in beer production. Being highly anionic, it is outstanding in forming complexes with proteins in the wort, eliminating haze formation during the final stage of the fermentation process. It also increases the rate of formation of compact trub, leading to greater yield.
